John’s Fish Kabobs

2 pcs of halibut cubed per skewer

2 pcs shrimp per skewer

2 pcs scallop per skewer

onion petals

cherry tomatoes

mushrooms

Pineapple pcs

1/2 C white wine

1/2 C Italian Salad Dressing

 

1. Pre-soak your wooden skewers for at least 1 hour.

2. Combine salad dressing and wine. Set aside for your
baste.

Take you skewer and start with an onion petal, then a
shrimp, then a cherry tomato, then a piece of halibut, then a mushroom, a piece
of scallop, a piece of pineapple. Repeat until skewer is full.

3. Spray each kabob with oil. Place on grill over medium
heat and cook for several minutes each side. Baste constantly with the salad
dressing mixture.
